In 2021, Eric brought 16 years of process control expertise as a pulp and paper industrial systems engineer to Moonshine University in Louisville, Kentucky, studying alongside industry experts to master whiskey and gin distilling systems.

By 2023, Moon Bird completed the necessary infrastructure and licensing to launch a 50L pilot line dedicated to early product development.

With the 50L pilot line up and running, the team spent countless hours testing, tasting, and refining — dialing in the exact combinations of grains and botanicals that would come to define Moon Bird’s spirits.
Full-Scale Production
Scaling Up
The arrival of our 400L commercial line in 2024 marked a major shift, transitioning facility operations from small-batch testing into full-scale production. What had been a pilot-stage operation was now a working distillery, ready to produce at real volume.
This upgrade meant new equipment, new processes, and a new rhythm for the whole team — but it was the milestone everything before it had been building toward.
Looking Ahead
The Next Milestones
By 2025, we achieved three major milestones: starting to fill our cellar with whiskey barrels for aging, selecting a partner to import good vodka at a good price, and finalizing a signature line of artisanal gins.
